I had a really stressful weekend.  I won’t burden you with the details, but I didn’t have time to plan out my meals today and ended up with a lot of macros left after dinner. Since this doesn’t happen very often, I decided to treat myself to dessert.  I searched the kitchen for ingredients and had an idea to make an ice cream sandwich.

Ingredients

  • 1 Chocolate Rice Cake
  • 1 Caramel Rice Cake
  • 2 Tbsp (32g) Peanut Butter
  • 3/4 Cups (77g) Dreyer's No Sugar Added Fudge Tracks Ice Cream Could also use Halo Top or Enlightened ice cream

Instructions

  1. Assemble ice cream sandwich. Optional: Top with Walden Farms Chocolate Syrup

To cut down on macros, use PB2 instead of peanut butter, use only 1 rice cake split in half or reduce the serving size of ice cream.
